This course will cover the basics skills of cake decorating, suitable for beginners or those wishing to refresh their knowledge.

We will be looking at factors such as design, colour and texture to create a stunning cake to be proud of.

Whilst working to your client brief, you will learn how to prepare your cakes ready to be covered in sugarpaste (also known as roll out fondant), to get that smooth professional finish.

You will be taught, how to use various tools, create texture, colouring techniques, and the use of moulds and cutters.

You will be required to make/buy a sponge cake, and buttercream to practice with as well as a dummy cake. There will be a small amount of homework each week

By the end of the course you should be able to:

- Explain how to split and fill a sponge cake
- Demonstrate how to cover a cake with sugarpaste
- Show how to pipe a shell boarder
- List 3 Health & Safety points relating to cake decorating

Who is the tutor?

About the Tutor: Lyn Pankhurst

Your tutor is Lyn Pankhurst, who has been teaching Sugarcraft since 2000. She is qualified to City & Guilds Level 3 Advanced to include: Royal Icing, Sugarpaste, Chocolate work and Boiled Sugar. Lyn completed her Teaching Certificate (PCET) in 2006 followed by her Foundation Degree in Education and Training in 2010. She has achieved Awards for Outstanding Teaching Learning and Assessment for courses taught at Kent Adult Education.

Lyn has achieved many National and International awards for her Sugarcraft in various exhibitions and competitions including Hotel, Restaurant & Catering Show (Formerly Hotelympia) - Salon Culinaire International 2020 where she received a Silver award for her Floral Wreath.

How will I be taught?

At the start of the course, you will work with your tutor to develop an Individual Learning Plan (ILP) to set out your prior learning and what you want to achieve by the end of the course alongside the learning outcomes listed above. It is vital that you engage with this process to achieve the outcomes and successfully complete the course.

You will complete tasks and assignments according to the course syllabus to successfully achieve the outcomes, with guidance from the tutor.

You will receive initial and ongoing feedback from your tutor. It is key that you also monitor and assess your progress throughout the course, to ensure your learning needs are being met and course and personal outcomes are being achieved.

There is no final exam for this course, Level1 certification is awarded on achievement of the course outcomes listed above.


What do I need to bring with me?

For the first lesson please bring:

- Notebook and pen
- An apron
- 6" cake dummy, 3" deep (any shape)
- 10” (12mm thick) Cake board
- Box to take home in
- Cranked handled palette knife
- 1.5kg white sugarpaste (buy from a supermarket)

If you have any cake decorating equipment please bring it with you. The tutor has some tools and equipment available for students to borrow on the during the lesson
