‘Simply’ learn the basic techniques of how to make these Unicorn cupcakes

Using roll out fondant you will learn to cover the cupcake top and model a Unicorn and other decorations to complete the set

By the end of the course, students will be able to:
• Describe how to colour fondant
• Demonstrate how to cover cupcake top
• Describe how to model a Unicorn
• List 3 Health and Safety points relating to Cupcakes

Who is the tutor?

About the Tutor: Lyn Pankhurst

Your tutor is Lyn Pankhurst, who has been teaching Sugarcraft since 2000. She is qualified to City & Guilds Level 3 Advanced to include: Royal Icing, Sugarpaste, Chocolate work and Boiled Sugar. Lyn completed her Teaching Certificate (PCET) in 2006 followed by her Foundation Degree in Education and Training in 2010. She has achieved Awards for Outstanding Teaching Learning and Assessment for courses taught at Kent Adult Education.

Lyn has achieved many National and International awards for her Sugarcraft in various exhibitions and competitions including Hotel, Restaurant & Catering Show (Formerly Hotelympia) - Salon Culinaire International 2020 where she received a Silver award for her Floral Wreath.

How will I be taught?

You will be taught as a small group using a variety of teaching methods including demonstrations, instruction, one to one guidance, and group discussions.

What do I need to bring with me?

Please bring the following to this course:-

- A note book and pen

- Batch of Cupcakes (see recipe)
- Small amount of buttercream( either shop bought or homemade)
- 1kg pack of White Roll Out Fondant (can be bought from a supermarket)
- Small cranked handled pallet knife


CUPCAKE RECIPE

Makes approximately 15

- 150g Soft Butter
- 150 Caster Sugar
- 3 Eggs
- 150g Self Raising Flour
- 1 t-spoon Vanilla Extract


Pre heat oven to 180°C, Fan 160°, Gas 4
1. Cream butter, sugar and vanilla extract together until light and fluffy
2. Add the eggs a little at a time, beating after each addition (If the mixture starts to curdle add a little of the flour)
3. Add remaining flour in two halves and mix at a low speed
4. Fill the cases about half full and bake for approx 18-20 minutes or until the tops of the cakes spring back when lightly touched.
5. Leave to cool
